MEET CHEZ ARIELLE

Hi! I’m Arielle,

International Vegan Pastry Chef with 20+ years of experience.

Welcome to the world’s first and only Vegan Baking Institute!

Since childhood I’ve always had a strong passion for food and, growing up in a multi-cultural family, I loved learning about baking recipes from different parts of the world.

My journey as a chef started in Sicily where I trained as a traditional pastry chef and learned how to create French and Sicilian pastries.

I switched to a plant based diet in 2009 after a friend challenged me to try 7 Days Vegan, which prompted me to think outside of the box. Learning how to cook using only plants ignited my creative spark and I set out to “veganize” every dish and dessert I had learned thus far.

At the time, it started as a true challenge because back in 2008 vegan product development was not as strong and innovative as it is now, but nonetheless, I was able to recreate timeless traditional pastries using simple ingredients.

The beauty about Sicily is that most primary resources like flour, nuts and oils are farmed fresh according to seasonality and so being able to test new recipes using high quality ingredients was an absolute joy.

But soon came the time where I realized I wanted to learn more about plant based baking and I knew that continuing to live in Sicily wasn’t enough, so when a colleague of mine moved to London for work

I had an immediate inner knowing, that was my next destination.

I landed a pastry chef job at Nama Foods a fully raw vegan restaurant in Notting Hill, a dream job and a once in a lifetime opportunity to learn from the best. Living in London and cultivating friendships in the hospitality industry allowed me to travel more and attend apprenticeships to add more knowledge to my bakery repertoire.

Since then, I have recreated Italian, French, British, Eastern European, Middle Eastern, Japanese and Indian staple dishes.

All vegan and gluten free.

You’ll be surprised how easy and joyful it is to bake without using any dairy, eggs, or even gluten most times.

After 20+ years, living in four countries, I have mastered the art of plant based baking and am now beyond excited to share my passion and knowledge with you!
